Report by Brigham Young University folklore student Karen Harrison, who collected information from her roommate, Beth Rasmusson. Gallon metal can with holes punched for a wire bail. Used for collecting objects or water and for cooking. Speculative etymology suggested.

Scope and Contents

Contains descriptions (and sometimes recipes) of culinary material lore used only in outdoor settings. Items were collected by students in folklore classes at Brigham Young University and Utah State University from 1970 to 1982. Most of the items are typewritten, but a few of the older items are handwritten. Many of the items contain a description of how, when, and where they were collected as well as explanations of social and cultural contexts.

Report by Brigham Young University folklore student Ron Ritschard, who collected information from his relative, Verland Nelson. Annual tradition at family reunion. Pork or beef roasts are soaked in wine, encrusted in onion salt, wrapped, soaked, and cooked in an underground oven.

Kentucky burgoo / DeAnn Rasmussen, 1980 June

Report by Utah State University folklore student DeAnn Rasmussen, who collected information from her grandfather, William F. Meadows. An enormous stew recipe (200 pounds of fat hens and a ton of potatoes, among other ingredients), cooked over wood fires 15-20 hours and served at large events such as the Kentucky Derby.
